Official definition from Jancis Robinson’s The Oxford Companion to Wine:
Pupitre is the French name for a hand riddling rack, traditionally used for riddling sparkling wines by hand.
Layman’s terms from Kori:
Pupitre is an A-shaped riddling rack for sparkling wines.
